Homemade Cinnamon Rolls

Merry Christmas for our family finds us at Mom’s house late Christmas morning for brunch. My entire life we have always had a huge family brunch (feast) with our extended family. I look forward to it every single year.

Cinnamon rolls are a MUST have. Mom and I make different recipes so depending on the year, we might have mine or Mom’s. Both are equally delicious. This recipe is the one I use! May this recipe be one that your family will use and treasure year after year!

1 1/2 cups water
4 1/2 cups of bread flour
3 T sugar
2 T of dry milk 
1 1/2 t salt
2 T of butter 
2 t of Active Dry Yeast or 3 t of rapid rise yeast 
Cinnamon to taste, to lightly cover the whole dough Remove the baking pan from the bread maker.

Cream Cheese Icing
1/2 block of cream cheese
1 stick of softened butter
2 cups of powdered sugar
3 t. of vanilla

Homemade Cinnamon Rolls

Attach the kneading blades to the baking pan of your bread maker. (It is possible to do this entire process by hand but honestly, it is so easy with the break maker I will not go back.)

Place the water in the pan first. Add flour, sugar, dry milk, salt and butter.

Make a hole in the middle of the flour and sprinkle the yeast in the hole. MAKE SURE THE YEAST DOEN’T TOUCH ANY LIQUID. Insert the baking pan back into the unit and close the lid. Select the Quick Dough Cycle.

Let the bread complete one rise cycle in the machine and take it out just before it starts baking. Punch the bread down but do not knead it.  

Roll the bread into thin rectangle and smear the top generously with softened butter. Top generously with sugar and cinnamon. Roll long side toward the opposite side. 

Homemade Cinnamon Rolls

Slice into 1 inch rolls. Place in 9 x 13 pan leaving space for rising. Cover and freeze at this point if desired. Put in the refrigerator from the freezer the day before using.

Set in the oven on 150 degrees for 30 minutes to rise. Cook the risen rolls on 350 degrees 20 minutes. But check earlier in case they cook quicker.
