Hot Pineapple Casserole

Growing up my mom, sister and I would take a little Saturday trip to the nearest city for a girls trip. We would do some shopping and head over to a little lunch spot to eat. That restaurant served (it still does serve) something very similar to this recipe. Every time I make it I am reminded of those girls’ day out. This recipe makes a great side dish to serve for your next ladies luncheon!


Ingredients:

2 cans of pineapple tidbits, well drained
1/2 cup of sugar
3/4 cup of flour
2 cups of shredded cheddar cheese

To cut back on the sugar you could cut up a fresh pineapple into very small bites and use instead of the canned pineapple. You could also use sugar substitutes as well.

Mix all the ingredients together and spread into a backing pan.

Bake at 350 for 25 minutes or until golden brown.
