Elizabeth Jane's Easy Lemon Cookies

This is one of the easiest cookies EVER.  Usually these are ingredients that people keep in the pantry, so it is a great last minute dessert!

Elizabeth Jane can make these all by herself and that make her so proud!  This would be a great recipe to make with your kiddos. Icing and sprinkles are fun additions to these cookies...you end up with sticky cookie bakers but they have a ball decorating them.

Easy Lemon Cookies

Ingredients (click HERE for printable)
1 box of cake mix (Duncan Hines works well but any will work)
1/3 cup of vegetable oil
2 eggs

Preheat oven to 375 degrees.  

Mix all three ingredients in a mixing bowl.  When well mixed rolls the cookies into small balls and place on a cookie tray.  

For small cookies cook 9 minutes or until barely tan on edges.  For larger cookies it may take about 11 minutes.  

You can make any flavor you prefer.  Taylor LOVES lemon so we usually make those. But we have made chocolate and strawberry too.
