Tuesday night's are Family Meal night. We have a great time gathering with the Pendergrass family and lots of others who have become family. I recently wrote and article sharing tips to help you start your own meal night. Check it out on this link if you have not read it.
Most family meal nights end up with an insta story and this week's story was of Jay making this delicious recipe!! He and Kari are doing a Keto friendly diet (and are really liking it.) We asked them to make this pizza for us that they had been talking about. We really liked it! This is their wonderful family. You have met the fellow in the middle before in another post...Pate. (or Pater Tater as I like to call him.)
Jay's Pork Rind Pizza(Keto friendly)
1 c ground pork rinds (grind in blinder)
6 oz of mozzarella cheese
1/3 c parmesan cheese
8 oz 1/3 fat cream cheese
1 t oregano
2 T garlic powder
1 T Italian seasonings
Pizza sauce (Rao's sauce is the lowest carb one Jay has found.)
your choice of meats
fresh sautéed veggies could also be added
Mix the cream cheese and the eggs together to a smooth consistently. Stir in the cheeses and seasonings until incorporated. Then add the pork rinds to this mixture. Stir completely. Pour out on to the pizza pan and flat. If you place a ziploc bag on your hand like a glove and lightly spray it with cooking spray it works really well to press the crust flat.
Bake the crust at 425 degrees for 20-25 minutes. Shorter if you like is just done and longer if you like it crispy. Take it out of the oven to cool for about 10 minutes before putting the toppings on.
Take marinara sauce and spread evenly over the cooled crust. Use as little or as much as you prefer.
Add your meat and mozzarella cheese mixture. (and veggies if you desires). Bake for an additional 9-11 minutes.
