One Pan Italian Roasted Veggies & Sausage

Our dear friend, Leslie Moten shares this amazing meal with us! Her family loves this so much that she makes it at least once a week. With two little children, meal time has to be easy…but it can be easy and delicious at the same time.

ingredients (click HERE for printable)

1 large sweet potato or 2 small red potatoes, (around 2 cups) cut into small cubes
1 lb. of Brussels Sprouts, quartered
1 sm./med. zucchini, cut in half and then into bite sized pieces
1 sm. head of broccoli, coarsely chopped
16 oz. of smoked sausage, (can be turkey sausage) cut into small slices

1/2 T. each: basil, oregano, parsley, garlic powder (or 1 clove of minced garlic)
1/2 t. each: onion powder, thyme
1/8 t. crushed red pepper flakes (optional)
4 1/2 T. olive oil
1/3 cup. parmesan cheese grated (optional)
salt/pepper, to taste

Preheat oven to 400 degrees. Line a large sheet pan with parchment paper or aluminum foil and set aside

Prep the veggies, throw them and the sausage onto a lined sheet pan.

In a small bowl combine all the seasoning and salt and pepper , if desire (I use about 1/8 tsp. pepper and 1/2 tsp. salt) with the olive oil. Stir to combine.

One Pan Italian Roasted Veggies & Sausage

Pour the seasoning & oil mixture on top of the veggies and sausage and toss to thoroughly coat.

Roast in the oven for 30-35 minutes or until veggies are crisp and tender, remove and toss parsley.

Serve non top of brown rice or quinoa (I only do this if I am serving a crowd and need the portions to go further.)

Serves 4-6 when served with rice.
