This soup is absolutely delicious and it is shockingly simple to make. I made it for the first time this fall and my people were relishing each bite. To write the directions down here is almost embarrassing…it is so easy. But I am hoping that will be a blessing to you.
Ingredients: (click HERE for the recipe)
2 9oz packages of cheese tortellini
3 boxes of chicken stock
1 t of minced garlic
2 t of Italian seasoning
4 chicken breasts
28 oz. of diced tomatoes
1 t. of garlic powder
2 t. of onion powder
salt to taste
shredded parmesan cheese
Pour the chicken stock in the pot and cook the chicken breast. Once the chicken is finished cooking remove the chicken. Let it cool and shred it into bite sized pieces.
Put the tortellini in the pot with the boiling chicken stock and cook for 4 minutes.
Add in all of the other ingredients saving the chicken until last.
Let simmer for a few minutes and it is ready to eat.
Sprinkle the top with parmesan cheese.
